Yes, the people of ancient Spanish or Mexican descent who lived in Texas are the main architects of one of the most popular fusion cuisines in the world. But before Tex-Mex was a type of food, it was also a railway. Confused? Alright, we’ll explain.
In 1785, the Texas – Mexican Railway was inaugurated. Commonly abbreviated as Tex-Mex, it was the first railway line that connected Texas with Mexico and a true bridge between cultures that created all sorts of combinations, including culinary ones. In fact, it was this train that made many Mexican products available on the American market.
Initially the name “Tex-Mex” was the nickname given to the railway. After a while, people also began to use the phrase to describe Texans of Mexican origin and eventually their style of food. In fact, Tex-Mex (Texan and Mexican) describes a unique combination that blends the US and Mexican cuisine, creating a completely new set of flavors.
Tex-Mex food is what we would call democratic, as it deals equally with both “poor” or cheaper foods (for example corn) and expensive or “rich” foods such as meat. Tex-Mex dishes are based on certain essential ingredients, the first being cornmeal which is very typical of South American foods. From this basic ingredient comes tacos, nachos, burritos and tortillas, however there are also certain vegetables: bell peppers, chili peppers, tomatoes, potatoes, salad, onions and beans which are commonly referred to as chiles.
And of course, as farms are quite common in these areas there is also plenty of meat.
There are also many different types of Tex-Mex sauces (most of them spicy), the most well-known of these being tabasco or guacamole. Both sweet and savory recipes use exotic fruits such as avocado, pineapple and papaya to make sauces or salads that accompany the meat.
